Blackberry Pie
Pies have never been my forte. I've made Apple Pies and that's about it. I won't even tell you about the disastrous Pumpkin Pie I tried to make a few years ago that turned into a messy goo. I've stuck with making Apple Pies because it's all I know about pie making. My friend Cristin held a BBQ for her daughter's birthday and it was like being in dessert heaven. While everyone mingled and lounged about enjoying the day, I stood in front of the dessert table salivating awaiting the "ding" of the oven which would mean the dessert would be out momentarily. Cristin's mother-in-law made a gorgeous Blackberry Pie that I tried to savor for as long as I could but all too soon it was down the hatch. I'm told that the recipe came from The Joy of Cooking, but I couldn't find that recipe so instead, here is a recipe from All Recipes. I trust this site as I've used it many times. Blackberry Pie 4 cups Blackberries 1/2 cup sugar 3 tablespoons Tapioca 2 tablespoons butter For the pie crust click Pie Crust. Preheat over to 350 degrees. In a large mixing bowl, combine blackberries, sugar and Tapioca. Be careful not to damage the berries. Pour into pie crust. Cover with top crust, seal and crimp edges, then cut slits in the top for the steam to vent. Top with pats of butter. Bake for 30 minutes, or until golden brown. All Recipes, Blackberry Pie IV
