Eggnog Cookies

I love eggnog. I love it so much that I drink gallons of it without worrying about how awful it is for me. I drink it straight and sometimes, I mix it with Sprite -- 1 part eggnog, 1 part Sprite. Yum! 

I found a recipe for Eggnog Cookies and I just had to try it. I was happy, almost giddy, over the notion that my favorite holiday drink would be the main ingredient for a cookie. Though sadly, my excitement waned. After only one bite I was unimpressed. The cookie tasted doughy... doughy with a hint of eggnog mind you, and lacked the depth of flavor I was expecting. Damn you Eggnog Cookie!!!!

Recently, my friend L.R. was at a restaurant where a guy, seated at the table next to her, sent back a bottle of wine because it had "no personality and no character." I laughed so hard because this guy clearly sounds like a tool. And now look at me; I'm the tool. "This cookie has no personality, no character... send it back!"

Eggnog Cookies

Ingredients

1 cup butter
2 cups sugar
1 cup eggnog
1 tsp baking soda
1/2 tsp ground nutmeg
5 1/2 cups flour
1 egg white, lightly beaten

In a bowl, cream butter and sugar. Beat in eggnog, baking soda and nutmeg. Gradually add flour and mix well. Cover and chill for 1 hour.

On a lightly floured surface, roll out half of the dough to 1/8th-in thickness. Cut into desired shapes; place on ungreased baking sheets. Repeat with remaining dough. Brush with egg white; sprinkle with colored sugar. {Instead of using sprinkles, I mixed about a half cup of powdered sugar with about a tablespoon of eggnog and used it to ice the cookies. I would also add about tbsp of vanilla extract for more flavor.}

Bake at 350 degrees for 6-8  minutes or until edges are lightly browned. Cool on wire racks.
